Tuscan Sausage Christmas Menu

Tuscany has a long culinary tradition bound to pork meat. One of the tastiest products are Tuscan sausages. Fresh pork meat mixed with loads of garlic, some pepper and other spices to cure the meat create a delicacy that is excellent even eaten raw.
The following is a Tuscan Christmas menu based on Tuscan sausages only. All entries in this menu include this delicacy as the main ingredient; however, fear not the legendary infamous unhealthy name that sausages have gained throughout the years. Recent nutritional discoveries have identified that the percentage of saturated fats is much lower than it was thought. So for this time you can let yourself stretch a point and go the whole nine yards with full taste and food enjoyment for your Christmas menu!

Fresh sausage and scallion tarts appetizer.
Ingredients for 4 people: 1 baguette, 4 Tuscan fresh sausages, butter, 2 fresh scallions, extra virgin olive oil.
Preparation: Cut the baguette in half inch slices, 4 per person, then slightly broil them. Spread a little butter on top of each, then remove the skin from the sausage and add a quarter of it on each slice. Clean the scallions and cut them in thin rounds, then sprinkle the tarts with them. Add few drops of olive oil on each and serve immediately.

Pasta sauce with sausage and tomato sauce
Ingredients for 4 people: 1 small onion, 1 clove of garlic, 2 cans of peeled tomatoes, 1 glass of white wine, 4 fresh Tuscan sausages, red hot pepper, extra virgin olive oil.
Preparation: Mince the onion and the garlic, the set it in a skillet with olive oil to brown. Then add the skinned sausages in pieces in the skillet. When the sausage is slightly cooked, add the glass of white wine. Keep the heat on high and let the wine evaporate. Now add the 2 cans of peeled tomatoes, breaking the tomatoes with a wooden spoon, add salt to taste, half teaspoon of sugar, a little red hot pepper, then lower the heat to minimum when it starts to boil, stirring every now and then. Add it to your favorite pasta and serve.

Sausages with wine and cream
Ingredients for 4 people: 8 sausages, 4 glasses of red wine, 250 grams of cream.
Preparation: Heat a large skillet over high heat, then cut each sausage in half lengthwise without completely separating the two halves. Set the sausages in the skillet and let brown slightly. Add the wine and keep the heat hight until all the wine has evaporated and the grease of the sausages has formed a cream with the wine. Turn the heat off and add the fresh cream mixing everything with a wooden spoon.
